Allergen Management and VITAL 4.0
This VITAL Training Course provides participants with the skills to perform a VITAL allergen risk assessment and declare cross contact food allergens appropriately. The focus of this course is to showcase how the VITAL Program allows food producers to assess the impact of allergen cross contact and provide appropriate precautionary allergen labelling statements on their products.

What you'll learn
The objectives of the course are the following:
- to gain an understanding of allergen management and risk review in the context of the VITAL Program
- to gain a sound understanding of the principles underpinning the VITAL allergen risk assessment
- to gain an understanding of the VITAL Program and its application
- to obtain a practical understanding of how to implement VITAL to achieve an appropriate outcome
- to gain competence using VITAL Online for ingredients, recipes and processing profiles and application of manufacturing scenarios.
Participants who attend this course and complete the assessment tasks to the satisfaction of the Trainer are to be provided with a Certificate of Completion.
Who This Course Is For
The target audience for the VITAL Training Course includes those responsible for the implementation and management of food safety, HACCP and quality systems and processes within a food production environment. This could include (but is not limited to) the following:
- Food Safety and Quality System staff
- Technical Managers
- Supplier Assurance Managers
- Product Development and Innovation Manager
- Procurement staff.
Prerequisites for Participants
Participants are expected to have a level of knowledge coming into the training to maximise their learning opportunity, including:
- Understanding of impact of allergens on the community
- Understanding of the concepts and principles of Good Manufacturing Practice (GMP) and Hazard Analysis Critical Control Point (HACCP)
- Understanding of their own manufacturing plant and/or food production process
- Knowledge and understanding of relevant local industry guides and associations.
Participant Requirements
- Laptop with internet accessibility
- Password, 2-Factor Authorisation setup, and access to VITAL Online training environment created by SGS Academy
- Product formulations – either actual or made up (if confidentiality is an issue) (optional)
- Product Information Forms (PIF) for ingredients used in the formulation above. If PIFs are not available, then similar information from the ingredient supplier should be provided to enable the participant to complete a VITAL risk assessment using VITAL Online (optional).

The focus of this course is to showcase how the VITAL Program allows food producers to assess the impact of allergen cross contact and provide appropriate precautionary allergen labelling statements on their products.
The VITAL Training Course is designed to complement VITAL Online. This course provides the following:
- a practical approach to integrating the VITAL Program into an allergen management plan
- an interactive component incorporated throughout the package
- opportunity to use VITAL Online, the web-based VITAL Calculator
- a range of practical examples
- opportunities for group discussions.
To be successful in understanding the concepts of the VITAL Program, participants need to have a sound grasp of the concepts behind food allergy, allergen labelling, allergen management and allergen analysis.
